What's For Dinner




I ask myself this question every morning. There are days when you just do not feel like the big heavy meal. I am going to share a wonderful recipe from Jan (my sister-in-law and business partner) for Warm Chicken Salad. This is what I ask her to bring for all get togethers and you just can't get enough, serve this up with fresh crisp fruit and crackers and it is fantastic.


4 chicken breast,boiled and cut up small
1 Cup chopped celery
1 small onion chopped
2 oz. slivered almonds
1 can water chestnuts, chopped up
1 Tbs. lemon juice
1 can cream of chicken soup

Mix all of the above together. Crunch up corn flakes and sprinkle on top (she uses right many) and drizzle with 1 stick melted butter. Bake 350 for 35-40 min

They are calling for snow here this weekend so I may just fix this Saturday morning and that way we will have something to snack on all day and I will not have to hear " what's for dinner"?
This way I can stay in the shop downstairs and finish all those last minute projects that are scattered all over the place.

  1. Mmm...this sounds so good! I will be trying this over the weekend...I'll scoop it up on some toasted sour dough bread I just made last night! I'm thinkin' put in crock pot of a morning then let set on warm for the day for all day munchin'! Mmm...thanks for sharing!!!
